3lb beef roast
1 tsp garlic,minced
1 tsp thyme
1 large onion, chopped
1 butternut squash, peeled, seeded, and cut into chunks
2 apples, cored and cut into eighths
2 cups frozen peas
1/3 cup water/beef broth
Place roast in the bottom of a slow cooker and sprinkle spices on the roast.
Add onion, squash, apples, peas and water/broth.
Cover and cook on low about 8 hours.
You could also make this in the oven.
Place all the ingredients in a ovenproof bowl and cover with alu foil.
Bake at 325 until the roast is 140F.
