Red curry chicken

1 lbs chicken or pork in pieces

2 cups coconut milk

1/2 onion, in pieces

4 cloves garlic

1 cup bok choy, chopped

2-3 tbsp boiled/baked winter squash

1 cup chinese cabbage, chopped

1/2 cup broccoli and cauliflower

1-2-3-4 tsp red curry paste (SCD legal)

Fry onion, garlic and red curry paste.

Add chicken and coconut milk.

Boil 1-2 minutes and add the rest of the ingredients. Let simmer for 10-15 minutes until vegetable is soft and meat is done.

Adding the winter squash (like kabocha or butternut squash) will give it a nice color!
